Latkes to Love

Servings: 6–8
Time: 15-20 minutes

INGREDIENTS

  • 2 c. grated and packed potatoes (can substitute half potatoes and half zucchini)
  • 1/3 c. gluten-free flour
  • 3 Tbsp. milkadamia Unsweetened
  • 1/4 c. minced onion
  • 1 Tbsp. cornstarch
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1/2 tsp. pepper
  • 1/4 c. milkadamia Pure Macadamia Oil for frying

 

 INSTRUCTIONS

  1. Squeeze moisture from potatoes using a towel.
  2. Combine with remaining ingredients.
  3. Heat oil in pan and spoon about 1/3 c. mixture into the pan for each latke.
  4. When golden brown on one side, flip once.
  5. Drain on a paper towel.
  6. Enjoy with applesauce or vegan sour cream.
